Are you a waffles or pancakes kind of person? I’m terrible at picking favourites, but not when it comes to this – it’s easily pancakes. There is no shortage of pancake recipes online – from classic buttermilk to the highly revered protein pancakes, and even the popular 2-ingredient banana and egg pancakes. Honestly, I like them all. But these are SO good – chocolatey, fluffy, sweet…

I won’t make the same promise I see on every pancake recipe (“this is thee BEST pancake recipe”), but I can promise you won’t be disappointed, and that’s good enough (I hope).

These easy chocolate pancakes take about five or less to whip up, plus another five or so to cook, so they’re not consuming by any stretch. However, I recommend these for those lazy mornings; the mornings where you don’t want to cook a laborious breakfast, but you do want something special, and where you can take your time to enjoy them with your favourite coffee and maybe a good book.

These are the perfect lazy day breakfast – something special to enjoy without much effort or time. I can’t promise they’re the best pancakes on the planet, but I can promise you won’t be disappointed – who doesn’t want chocolatey, fluffy pancakes in five minutes??

Ingredients

  • 1 egg

  • 2 tbsp honey (or maple syrup)

  • 1 tbsp almond butter (peanut butter would work too – I’ve even used hazelnut butter which was amazing)

  • 1 banana, mashed

  • 1 tbsp flour (plain, spelt, buckwheat would all work)

  • 2 tbsp cacao powder

  • 1 tsp baking powder

  • Pinch salt

  • Optional: 1 tbsp cacao nibs or 2 tbsp chocolate chips

Directions

  • Mix all ingredients together in a bowl and mix well to create a smooth batter
  • Heat a small amount of oil in a non-stick pan or griddle. For best results use a pastry brush to make sure the surface is as evenly coated as possible. Wait until the pan has had time to heat up (medium heat), then carefully spoon the batter onto the pan. You may need to cook them in batches.
  • Cook the pancakes for around 2 minutes – watch for bubbles to appear on the top surface of each pancake. Then, use a spatula to flip the pancakes and cook for around a minute on the other side.
  • Plate up your pancakes and top with whatever you want – ideas include some sliced banana, berries, peanut butter, maple syrup, extra chocolate chips or cacao nibs… but the options are endless!
